A stick remains straight when viewed through water. From our perspective it appears bent.
The diagram is irrelevant because it assumes the disc-shape of the moon. The moon is a spheroid, like the earth. I don't believe there is much in the way of astronomy in your Bible so that is irrelevant too.
(Nowhere in the Bible is it stated that paracetamol soothes a pain in the neck, but it does!)
The two illustrations are not speaking about the same question.
The question is, when the moon is seen straight above or almost straight above it is circular in shape but as it moves away from the straight up position. Moving toward the horizon and farther away from the viewer and the seen view of straight above the viewer. It, because of perspective distortion and atmospheric conditions it takes on an oval shape. Which is a characteristic of a flat or convex circular disc shape not one of a sphere.
