I worked part of the day.

I've been ruining a lot of meat trying to get a tender roast. I think I found the trick. Marinate with vinegar/teriyaki. Braise at 325/350 for two hours (or more). Specifically, I have been using chuck roast. I had been cooking it at a much lower temperature (low and slow, as they say), which intuitively should work. But I read that intuition is off with that particular cut.

It's not the best cut of meat, which makes it all the more satisfying when it comes out good. It's kind of like how smokehouses back home turned brisket into the go to meat. It's not the best cut, but when done well it will make your tongue slap your forehead.

Well.. we're officially in January.. a particularly brutal month for Minnesota winter.

You have all my respect being able to endure it. For some inexplicable reason, I always think of Dylan's "Ballad of Hollis Brown" when I think of brutal winter weather.

I like the movie, but for the most part no. The accents are horrendous. We draw out our "oos" but to a much more subtle degree. It might be more accurate for more northern parts of Minnesota.. but the Minneapolis area the movie was largely based in.. not really.. lol.

I do know the Coen brothers grew up in Minnesota.. so I guess I give them somewhat a pass, they just wanted to make a fun quirky movie.. lol.

They are. But I feel the topic is best presented in relationship. You’re living the principles and making adjustments as needed. That’s more powerful for the pair and audience. You need thick skin to do it. It’s one thing to discuss something anonymously on a forum and another to see your spouse on a stage talking about you.

You need a dutch oven. Like Le Creuset, Staub, etc. The moisture gathers on the lid and drips down to the meat. That helps with tenderness and they’re better heat conductors than traditional pans.

Look for All About Braising by Molly Stevens. Yes, I went to my shelf on your behalf! She’s a well-known expert and won the Beard award for the book. That’s all you need. The recipe for braised cabbage is incredible.

Stop ruining your meat! I have hundreds of cookbooks and culinary training. Just ask. :)

Taking a break from some New Year's cleaning, basement project I wanted to do all last year finally starting, it's amazing to see the ice formations outside. Roads are slick and surprised they haven't called me yet.

Definitely sweat up a storm cleaning in the basement and rearranging some stuff. Probably about 9 buckets. 40% accomplished but I think I'm going to move on to dinner. I'm going to try to find a way to integrate it into my cleaning habits either on a weekly or bi-weekly basis. That way it's not such a chore to take on all at once. I think I spent 3 hours on it. Makes me feel better going into 2021.
