Animals sacrificed in every culture which does so are ordinarily chosen for this dubious honor because they possess an innocence we lack. Afterward, they are eaten, so they actually suffer the fate of any animal needed for food. If you're a vegetarian, of course, you may have decided to forgo that practice, too, and for the same reasons that others practice animal sacrifice.
As for that verse in Exodus, I need to do some study, but I'm guessing that there are aspects to the term "sorcery" which mean that you are unlikely to qualify. In any case, I'm fairly certain that this is true of the Middle Ages and the Renaissance periods.
If you read the section on Bodo the Serf in Power's Medieval People, you will find that Bodo buzzed for bees, and this practice is also found in the Old Testament without any condemnation attached to it whatsoever.
