Why, when Jesus fulfilled the law once and for all?
Jesus said: "It is finished" (John19:30) Yet I had not even been born yet. The work He does in us and in our lives is a finished work. "But because of His great love for us, God, who is rich in mercy, made us alive with Christ, even when we were dead in our trespasses." (Ephesians2:4,5)

"being confident of this, that He who began a good work in you will continue to perfect it until the day of Christ Jesus" (Phil1:6) To be perfected is to be whole, compleat and mature. We plant a seed, the seed sprouts, then takes root and begins to grow. Eventually when the seed is mature then fruit is produced. The fruit we are to show is love, joy, peace, patience, kindness, goodness, faithfulness, gentleness and self control". (Galations5:22) With eager expectation we wait to see how fruitful the plant will be. Or what sort of beauty or flowers the plant will produce.

Vegetarian is not the diet of scripture. God's people were livestock farmers. They ate meat.
True but it was not ideal. In the millennial reign, even lions will eat straw like the lamb. Death came because off sin, that death includes meat for food. When Adam and eve was created, they didn't eat meat.
