Because God's Word isn't always literal. It covers a wide range of genres from the historic to poetic and symbolic.
Jesus often spoke in parables and Genesis 1 can be viewed as a parable of sorts, conveying to the culture and understanding of the time that God created everything.

If Genesis 1 had to be taken literally, I would have to reject it as false, since what I observe with the senses and intellect God gave me, does not line up with parts of the creation account. If I have to reject Genesis 1, then it calls into question the veracity of the other books of the Old Testament. Since the Old Testament prophecies lay the foundation for the advent of Christ, it would seem that you insist on undermining my faith in Christ.

Yes, And Copernicus' magnum opus on the movement of the spheres was not published (for fear) until shortly before his death in 1543. Luther died in 1546. Augustine makes a critical point that applies to the flat earth delusion.

I do believe that there is a dome in which the sun, moon & the stars move within it, created by God.

The Bible is not a science textbook. The point of Genesis 1 is to show us that it is God's world; God created, said it was good, etc.
It does not explain HOW God created and was never meant to.

Yes - but HOW?
How did he divide water - have you ever tried it?
How did he make trees from nothing? Were they adult trees, or acorns/saplings that grew?
How did he make flowers and bushes?
How did he make animals, fish, birds, insects? How did he decide how many legs to give them; whether to give them fur and feathers or wings and gills?
How did he make a human being - with his complex brain, nervous and digestive systems - from the dust of the earth?
How did he make two lights? Why did he not make them till "day" 4?

Where does the Bible answer those questions? If it doesn't, then my statement that it doesn't tell us HOW God made his creation, stands.
