First, it wasn't man-made teachings Jesus was against.
Jesus was against the way the Pharisees enforced the teachings of God. But how do you know it's strictly man-made teachings? For example, when the apostles chose Matthias, your eyes see them drawing lots to choose a successor, yet the Scripture clearly says that the Holy Spirit guided them. Also, Jesus looked human, yet was/is God. So the Jews always thought "How can this MAN tell us these things?"
Secondly, on the Sabbath, the people of God did not gather to worship. They rested from work. Also, synagogue was not a place to worship, it was a place to learn. So they gathered to learn, as Jesus Himself proves when he reads the Prophet Isaiah in the synagogue. Not only that, they went to synagogue on Sabbath, weren't the teachers WORKING when they were teaching the people?
Again, we worship every day, as the priests did. Worship means sacrifice, necessarily.Well, God's 4th commandment is to honor your father and mother. Be that as it may, the requirement of God was to rest on the Sabbath. They worshiped every day.

Matthew 15:3-9
[2], Why do thy disciples transgress the tradition of the elders? for they wash not their hands when they eat bread.
[3], But he answered and said unto them, Why do ye also transgress the commandment of God by your tradition?
[4], For God commanded, saying, Honour thy father and mother: and, He that curseth father or mother, let him die the death.
[5], But ye say, Whosoever shall say to his father or his mother, It is a gift, by whatsoever thou mightest be profited by me;
[6], And honour not his father or his mother, he shall be free. Thus have ye made the commandment of God of none effect by your tradition.
[7], Ye hypocrites, well did Esaias prophesy of you, saying,
[8], This people draweth nigh unto me with their mouth, and honoureth me with their lips; but their heart is far from me.
[9], But in vain they do worship me, teaching for doctrines the commandments of men.
