The body is extremely complex, but we do fully understand it (minus the brain which we're learned more about in the past ten years than in all of history combined). We can now create almost any organ you want via stem cells, we can create artificial organs, and we understand the body's functions down to the cellular level.
We will in the next century. We already create other organisms (you can download a type of worm that is accurate down to each cell's parts and which runs in real time). To make a better design would be easy given all the flaws. For one, how about we not include the useless appendix or coccyx? We could also remove the blind spot in your eyes that forces your brain to have your eyes vibrate to compensate. All those needless, tiny bones in your ankle and foot could be reduced to prevent ankle rolls (we evolved from tree climbers, so we're not like other land mammals that don't roll ankles like us). I could keep going, but you get the idea.
Science says we will build a better human.
God says he will have to save us from utter destruction by our own hand.
What to believe? Mmmmmmmmmm.
