Yeah, the angles to the sun in the example given are not from the chord between the two locations but from tangents at each location. It is disingenuous to use a globe as the basis for flat earth calculations.
The two locations need to be far enough apart to reduce error but close enough so that earth curvature will not make that much of a difference.
Assuming the earth is flat will produce a closer distance to the sun than will assuming the earth is curved but if the two locations are close enough then the margin between the two calculations will not be excessive.
