Fresh wine as it's fermenting out gasses. If you put new wine that's still out gassing in an old wine skin the wine skins that are brittle would burst.
After the wine has fully matured it no longer out gasses, and can be safely stored in an older wine skin.

If you are referencing the "new wines in new wine skins" that was more about new doctrine than the process of fermentation. As already stated, wine by definition is fermented, otherwise it is just grape juice.

How long to finish the fermentation of wine in production?
initial Fermentation with out-gassing can take 5-7 days, after that you can normally bottle the wine (not much presser build up after this point) for another 4-6 weeks.
Now this is base on larger production (Gallons at a time) smaller scale / single bag production the times might change. At that point it would be best to talk to a wine expert.

It is called strong drink in the OT for a reason, and no one can get drunk on grape juice, hence, it was wine, it was alcohol in the OT and NT. People drank it, Jesus and Paul drank it.

"New Wine" is in the process of fermenting.
And "Strong Drink" is distilled product unrelated to "Wine".
Jesus' use of "New Wine" didn't have anything to do with "Wine" at all, but used the wine making PROCESS as an illustration that HIS Way, the NEW COVENANT WAY that HE would bring, COMPLETING the redemptive process with His propitiatory death on the Cross, COULDN'T be "contained in the OLD system" that had been in place, because it was incompatible with it. That's to say that a Religious system legalistically mandating the performance of "Works", and an "Atonement" that was only a temporary COVERING of sin, and not the REMOVAL of it WAS NOT WHat Jesus would die for.
And so it had to proceed separately in "New Containment" - i.e. the "Visible Church".

Having been in groups that almost call salvation to be questioned over the length of time
the grape has been processed.
Not judgemental over this, just looking for viewpoints.
Really like the way the story of the wedding feast relates also.
Does any church break fellowship over alcohol content.
I have been to both services and cannot understand the division over this issue.

Also of people act like the wine in Bible days, had no alcholol, which is easily proved to be wrong.
I enjoy a glass of Merlot (sometimes 2) with my dinner.
My Pastor friend, in a very well known large church here in Texas, has a glass of Whiskey each night. It helps him wind down, relax, and get a good nights sleep.

Do you think all who use fresh grape juice, gasses not all off, are being disobedient
to scripture? Many Christian churches I have attended just use fresh juice.
Myself I take communion in the home with my own wine.

The issue has absolutely nothing to do with Biblical teaching, and absolutely everything to do with our country's history. Doctrines that prohibit alcohol or that try to explain away wine as being "unfermented" hail back to the days of the Temperance movement and Prohibition. It's an American thing, not a Christian thing.

It just seems like they are so touchy over the length of time the wine has been fermented.
Old wine I have tasted is kinda bitter, but that is just not the case in all wines.
When the "best wine was saved for last", how did they know by taste?
Fresh juice is new from the vine and very sweet.
