He is not bound by reality. Since we believe he is all-powerful, he can decide what reality is. Like I said, you can't disprove God by saying something He did goes against reality, or by a lack of evidence. You can try to disprove Him by finding contradictions between what we teach and what is fact. And evolutionary theory is a theory, not a fact. If we taught that the earth is 6000 years old, but geologists had proof that the earth was billions of years old, you could use that to disprove God. However, we don't have proof that the earth is billions of years old. We have evidence that it is, but not proof. Otherwise the Young Earth Theory wouldn't still exist.*

For instance, there are fish bones found high up in the mountains. A Christian might say the great flood enabled the fish to die that high up. An Atheist might say that a hawk took his dinner up there and left the bones up there. There is more than this example. So please don't say there is no evidence.*
