I am more a rice eater then a cornmeal eater, Basmati is what we have put back. Although I have a killer recipe for cornbread I found not so long ago (and I typically hate the stuff) but not that one.

I was just looking up corn mush to make, because I never had it before and I have been experimenting lately (like today I made sausage from oatmeal) looking for and trying out depression type foods and that wasnt bad at all I was pleasantly surprised.

I just found this one and thought I'd try this one (Just Chef John) I didnt know this about this recipe) I hope to try this one tommorrow because it seems pretty easy.

So we pulled out some of that ground corn today and Barbara made some old fashioned southern corn bread. She added sugar for my northern tastes (I have always just eaten Jiffy mix). It was good. It is heavier than what we are used to and the overall taste is more, shall we say, "down home"? All you need is one piece with the Chili we had and you are filled up. This will be a good for feeding the poor and starving people who are seeing fit not to prep today. If some of you non-preppers find yourself in a fix in the coming days and you are in our area, drop in for a nice meal! We may put you to work in the fields pulling weeds or something.. but most people do not want charity and will probably ask to work for their food.

Heres a homemade recipe for Jiffy mix I have over on my own site, but I got it off another one (if anyone can use it)

Homemade Jiffy corn muffin mix




(Recipe Adapted from Food.com)
2/3 Cup Flour
1/2 Cup Yellow Cornmeal
3 Tablespoons Sugar
1 Tablespoon Baking Powder
1/4 teaspoon Salt



Add all ingredients into a quart sized freezer bag & give it a good shake to mix.

Write your instructions on the bag as follows:

Jiffy Cornbread Mix

Add: 1 Egg, 1/3 Cup Milk, 2 Tablespoons Veg. Oil
Bake at 400 Deg, 15-20 min.



I typically hate cornbread but I found one recipe I love I will post it below if anyone would like it.

Jiffy Corn bread with creamed corn

Ingredients

2 boxes Jiffy corn muffin mix (or make your own, see recipe)

3 Tbsp sugar

1 cup sour cream

3 eggs (beaten)

½ cup (or 1 stick) of melted butter

1 tsp. salt

14 oz. can creamed corn
(or make your own, see recipe)

Directions

Mix all ingredients together, then pour into greased 9x13 baking dish.

Bake at 375 degrees for 30-35 minutes or until light golden brown.

These are so good, I just love this recipe. Almost 50 years on this planet and I finally love cornbread (I always hated the stuff, it was too dry and bland)

I just receieved this hominy corn order that I placed a couple of weeks ago (in today from Amazon). I received the white hominy (in the can) but I had also ordered a 5 lb bag of it (dry). I just never had it before. I was told you can just eat it with butter and salt which I know I will just try first, and I see various online recipes for it but I was curious whether any of you have eaten it (and if you liked it) or have a tried and true recipe for it (one that you preferred).

I dont even know how to prepare the dry stuff yet Im guessing I should soak them, not sure yet how long (but these look good in the bag).

I wanted to make these tommorrow with dinner.

I grew up with Jiffy cornbread. Box recipe. My wife is from the south and I am from the north (just a few miles from Canada). People down south say "that is not cornbread, that is corncake." I suppose they are right being that southern corn bread has no sugar and Jiffy is loaded with it. But there is nothing better than a nice big slice of hot Jiffy corn bread with a chunk of melting butter running down the side.

Im making charcoal today, at least i hope that's how it works out. This is my first time, we'll see how it woks.
Now that is something I have never done... at least not intentionally. We have had bonfires in the back lot and I realize that the black chunks left in the hole are "charcoal" but I never tried to do anything with it.

Oh yeah specially that whipped sweet cream I love that stuff when I have it on on sweet rolls, that or even banans bread.

One is whole (dry) not called that specifically, which I received in a 5 lb bag over at Amazon, the seller sells it that way
And the other is labeled hominy, I just received in a couple cans of it as well (packed in water)

Im going to use it in a coal forge. I'm going to try forging some steel. I can also use it in my BBQ grill. I don't buy those briquettes, and i use wood in my grill anyway, but i have to let the wood burn down into coals before i can cook on it. If i make charcoal then i wont need to wait anymore. I could just buy hardwood lump charcoal for about a dollar a pound i think, but im poor and its hard to get to the store anyway, so why not make my own? :)

When making charcoal, you don't let the wood burn with a flame but you instead heat the wood up inside a sealed container until it turns into charcoal. Just in case anyone was wondering.

I have seen that made in videos, that is such a cool idea.

Tells us how it turns out, I would be interested to know.
