Perspective causes objects to appear smaller as they move further away. The sun and moon stay the same size as they pass across from East to West, so no, it isn't a matter of perspective.

No the sun appears to be a different size at sunset & sunrise.

The earth does not travel around the sun, it is the sun, moon & the stars that travels in the firmament above the earth.
It is the firmament/dome that turns like a wheel, not the earth.
As for sunrise & sunsets that is just a matter of perspective.

As @podromos has said in post #1,681, the sun and moon would have to change measurable size if it was just a matter of perspective. And not only that they would have to change speed too, just like in this simulation video @ 1:19 - 1:50

They sometimes appear bigger at rising and setting, but when measured in photographs they are actually exactly the same size.
We've posted several examples of multiple exposure photographs in this or other threads where this is demonstrated.

Where are these dishes pointing?

This is a Christian organization providing satellite TV channels for populations across Africa & the Middle East. For them to do this, satellites must exist & be in geostationary orbit around the earth. Balloons wouldn't work and these dishes need to be pointed at an exact location in the sky. One degree off can mean no signal. I know this because I have set up satellite dishes myself. Try pointing one at a balloon in the sky and you'll get my drift, or literally the balloon's drift!
