Her question wasn't --- How's come we don't? --- but, How's come we can't?
Can we --- or can't we?
Personally I don't know for certain. Therefore I think it's an interesting question.
But even the person who asked doesn't know, his assumption that we can't use apes as organ donors is based on the fact that we don't use them.
And as pointed out there are plenty of reasons to come up with why we're not using apes even IF they are viable.
I'd like to add the following reasons (besides ethical) as well: Apes breed and grow slowly and produce few offspring.
