For example, the Czech republic ordered just 14 leopard tanks from Germany few years ago to test them, but it will take till the end of 2026 to deliver just these 14 tanks. There are plans to buy another 77 tanks, but this delivery will start in 2027 and only maybe.

That is also why Poland had to buy tanks in South Korea to get them quickly.

But because our economies are not built upon the defense industry, what will we do with those plants after the nations' stocks will be filled in 5 years. We would need to abandon them again (if there will be no war, hopefully).

Also, I do not know where to even get employees for those plants, the unemployment rate in the EU is quite low.

There's always a war, and we can supply the people fighting that war. Both sides, ideally.

From what I've read of these investments, a good portion of the money is aimed at building up infrastructure and production capability, not just buying stuff. One example is, if I remember the numbers correctly, Patria here got about a 300 million € investment into building up and expanding their manufacturing capability. This is just off the top of my head, I might remember details of the deal a bit wrong, but I remember 300 million being the figure talked about.

And Germany has specifically talked about investing in its internal infrastructure.

This is what happens when you attempt to change the status quo. If the world continues on this trajectory then the USA will soon be supplanted as world leader. Could be one day American looks back and sees how MAGA was not so great after all. I imagine though it is God's will, as many do think that the EU has a much bigger role in the end times than the USA. So, this shift has implications for Israel's future. I'm just glad that Jesus will save them in the end.
