Aww. This isn't the actual recipe but basically, I cut up potatoes into cubes and sweet potatoes into cubes. Put them in aluminum foil on a tray with olive oil salt and pepper. in the oven for 45 minutes. the brussel sprouts basically is cut in halves on a cookie tray with aluminum foil. Put olive oil over that also with salt and pepper in the oven for 25 minutes. I think 360 to 370 temperature might be good. Just keep checking and maybe turn over the potatoes one time.I tried doing something like that myself this morning with some leftover vegetables from my most recent delivery from HelloFresh ... it tasted okay, but didn't look nearly as presentable and appetizing as your creation above does.
