Why is there no evidence that Jesus baptised with immersion in water?

People in prison seem to get the Holy Ghost even though they were not baptized in water.

If that's the sum total of what instituting the sacraments was intended to accomplish, you might be onto something. Once more, however, the Bible's account of the baptisms of early converts to Christianity describes the issue totally differently.
