In those days the Romans had an eight day calendar and Monday was the first day of the week. The middle of the week is between Tuesday and Thursday. Although Wednesday is the fourth day of the week.

How can Monday be the first day of the week, but Wednesday be the fourth? Did they have another day between Monday and Wednesday besides Tuesday?

7 divided by 2 is 3.5 / 7 divided by 3 is 2.33...

The first DAY of the week is specific, it is Sunday; according to tradition. The (first of the week) is less specific, and it can included Monday. For example: Monday is the first work day of the week, apart from the weekend.

That didn't happen until the Gregorian calendar and the industrial age.

Uh no. We are in a 1st Century Hebraic context. The Sabbath is the 7th day and Sunday is Yom Rishon (first day).

Traditions such as what?

Also, how do you determine Herod didn't know what day the Passover was to be celebrated?

Read the parts around that verse for context.

Acts 12:3-4
3 And because he saw it pleased the Jews, he proceeded further to take Peter also. (Then were the days of unleavened bread.)
4 And when he had apprehended him, he put him in prison, and delivered him to four quaternions of soldiers to keep him; intending after Easter to bring him forth to the people.

The days of unleavened bread are after Passover.
The Easter in v. 4 is some time later.

Lent - 40 days with no meat, fasting for Tammuz,
who was killed by a wild boar.
Ends with killing the pig (unclean meat) for a feast.

"The date of Easter is not fixed, but instead is governed by the phases of the moon – how pagan is that?

All the fun things about Easter are pagan. Bunnies are a leftover from the pagan festival of Eostre, a great northern goddess whose symbol was a rabbit or hare. Exchange of eggs is an ancient custom, celebrated by many cultures. Hot cross buns are very ancient too. In the Old Testament we see the Israelites baking sweet buns for an idol, and religious leaders trying to put a stop to it. The early church clergy also tried to put a stop to sacred cakes being baked at Easter. In the end, in the face of defiant cake-baking pagan women, they gave up and blessed the cake instead."

Are you unfamiliar with the term "parts of speech?"

The last day of the week can be Friday or Saturday, depending if you are speaking of the work week or the very last day of a week.

Again: The first DAY of the week is Sunday. The first of the week, or first part of the week ends with Monday.

The last day of the week can be Friday or Saturday, depending if you are speaking of the work week or the very last day of a week.

The middle of the week is usually from Tuesday to Thursday.

Cambridge Dictionary
Midweek: noun, the middle of the week, usually from Tuesday to Thursday.

Whatever...you are wrong in this case...if you want to play your semantics game, go right ahead.

Is English your second language?
English is my first language and you are wrong. Monday is NOT the first day of the week, nor is it the first day of the work week in the Hebrew economy. YHWH gave us six work days followed by the 7th day Sabbath. Therefore, the day after the Sabbath is the first workday of the new work week.

What does America have to do with Monday as far as Scripture goes?

The sign on the cross was in Hebrew, Greek and Latin...and that was in Jerusalem
Yes - as ordered by the Roman governor.

Greek and Latin were for the benefit of visitors and the occupying troops, not for the Jews.
