Come on fellow vegans... post your fav recipes: here are mine:

Baked Tofu with Rataouille Veggies
1 lb. firm tofu
2 cups green pepper, cut into quarters lengthwise, and sliced horizontally
2 cups red, orange, or yellow pepper, cut into quarters lengthwise, and sliced horizontally
2 cups onion, cut into half moons
3 T. olive oil, divided
2 cups zucchini, cut into 1/2-inch x 2-inch sticks
1 1/2 cups yellow squash, cut into 1/2-inch x 2-inch sticks
4 t. garlic, minced, divided
1/2 cup white wine (or white grape juice or apple juice)
1/3 cup black olives, pitted, and each cut from end to end into 6 strips
1/4 cup freshly chopped basil, divided
1/4 cup freshly chopped parsley, divided
1/2 t. salt
1/2 t. freshly ground black pepper, divided
2 T. red wine vinegar
1 T. tomato paste
1 1/2 t. Dijon mustard
1 t. tamari or soy sauce


Cut the block of tofu in half lengthwise, turn each half cut-side down on the board, and cut through the outer edge of the block of tofu 3 times to yield 4 tofu cutlets from each half. This means that the block of tofu will yield 8 tofu cutlets. On a large cookie sheet, place a clean, lint-free towel, or a layer of natural, unbleached paper towels, then all of the tofu cutlets in a single layer, followed by another layer of toweling, and finally place another large cookie sheet on top. Place several large cans or something very heavy on top of the cookie sheet and leave tofu to sit for 1 hour. This process is known as cutting tofu into cutlets and pressing. I use this technique a lot as it makes the texture of the tofu much firmer.

Meanwhile, in a non-stick skillet, saute both peppers and onion in 2 T. of the olive oil for 3 minutes to soften. Add the zucchini, yellow squash, 1 T. of garlic, and saute an additional 3 minutes or until the vegetables are crisp tender. Add the white wine, olives, half of the fresh herbs, salt, and 1/4 t. black pepper, reduce the heat to low, and simmer for 5 minutes. While the vegetables are simmering, in a small bowl, combine the remaining olive oil, garlic, fresh herbs, black pepper, and other remaining ingredients, stir well to blend, and set aside.

Lightly oil (or spray with a light mist of oil) a 9 x 13-inch baking dish. Spread the sauteed vegetable mixture in the bottom of the pan. Place the pressed tofu in two rows over the top of the vegetables and pour the reserved red wine vinegar mixture over the tofu. Cover the baking dish with a piece of aluminum foil and bake at 375 degrees for 30 minutes. Serve 2 pieces of tofu per person with a generous portion of the ratatouille vegetables spooned over the top of the tofu.

oh this is a good idea!

oh, here's the best lemon lentil soup

3 Tbsp olive oil (or any oil you want)
1 onion
3 stalks celery with leaves, diced
2 carrots, peeled and cut in a medium dice
1 tsp dried coriander
1/2 tsp cumin
1 dried hot chile or dash of cayenne pepper
7 cups vegetable stock
1 cup red lentils (massoor dal, available in Indian groceries, if not available subtitute brown lentils)
1 1/2 tsp salt
1/4 lemon juice
1 large bunch of cilantro

In a 3 quart saucepan, saute onions, celery, carrots, coriander and cumin for 10 min. Add the chile, vegetable stock and lentils, bring to a boil. Reduce heat, cover, and simmer 1 hour. Puree just a bit in the food processor or use a hand blender. Stir in salt, lemon juice and cilantro! YUM!! serves 6

This is one of one of my favourites nice and rich like a cheesecake, your non-vegan friends ain't going to believe it contains no dairy. Sorry that I have'nt put in the American measurments but i'm not really sure what the amounts convert to in cups etc
9oz vegan digestive biscuits, crushed
5oz vegan margarine, melted
3oz brown sugar
1 level tsp Agar powder
7oz plain chocolate
1 tbsp of golden syrup
8oz tofu
mix together biscuits and marg then press into a cake tin (pref one with loose bottom)
Then melt chocolate and mix in the syrup,sugar and tofu.
Dissolve the agar in a quarter pint of water,then blend it into the chocolate mixture.leave to set for 2 hours and it's ready!

1 cup uncooked couscous
2 cups cooked black beans
1 stalk celery
1 small red pepper
2 medium tomatoes, diced
1/2 cup chopped green olives
1/2 cup chopped fresh parsley
2 green onions, finely sliced
1/2 Tbsp lemon juice
salt and pepper to taste

Pour couscous in medium heat-proof bowl. Bring 2 cups water to a boil and pour over couscous. Cover and let stand 15 minutes, then fluff with a fork and allow to cool to room temperature. Transfer coucous to large boil. Add remaining ingredients and toss to mix.
Serve at room temperature, or chilled.

1 1/4 cup all purpose flour
1 cup oat bran
1/2 cup sugar
1 tbsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 cup (rice/soy) milk
1/4 cup applesauce
1 tsp vanilla
2 really, really ripe bananas, peeled and chopped

Preheat oven to 400F degrees.
Combine first 6 ingredients in a large bowl. Whisk milk, applesauce, and vanilla to blend in medium bowl. Add milk mixture to dry ingredients, stirring until just combined. Mix in bananas. Divide batter among twelve muffin cups. Bake until toothpick inserted into center of muffins comes out clean, about 20 minutes. Transfer to rack to cool. Serve warm or at room temp.

1 green or red bell pepper, cored and chopped
3 large garlic cloves, chopped
4 teaspoons ground cumin
2 teaspoons freshly ground black pepper
6 cups vegetable broth, or water
1- 28 oz can crushed tomatoes
3- 4 oz cans chopped mild green chilies
2 cups frozen corn
Tortilla chips

Heat oil in a large saucepan on high heat. Add onion, green or red pepper, garlic, cumin and black pepper. Cook, stirring often, about 5 minutes. Vegetables should be soft.

Add broth, or water, tomatoes and green chilies. Cook for 15 minutes more to let flavors blend. Add corn and cook for 5 minutes. Top with tortilla chips and serve.

Crust
1/2 cup bulgur wheat
1 cup water
pinch of salt

Filling
1 TB sesame oil
1 onion, diced
1/2 lb broccoli, chopped
1/4 lb mushrooms, chopped
11/2 lb tofu
1 TB umeboshi paste (pickled plum paste) or white miso
2 TB sesame tahini
1 TB tamari
Crust: Bring water to a boil; add bulgur and salt. Return to a boil, lower heat, and cook 15 minutes. Lightly oil pie tin and press hot bulgur evenly in pie tin. Bake at 350°F for 12 minutes or until somewhat dry and "crust-like."

Filling: Heat oil and sauté onions, broccoli and mushrooms. Cover, turn off heat, and let skillet remain on burner while you prepare tofu. Blend tofu, tahini, umeboshi and tamari until smooth. Mix with cooked vegetables. Pour onto bulgur crust. Serve at 350°F for 30 minutes. Remove form oven and let sit for 10 minutes before cutting. Serve hot or cold.

2 garlic gloves crushed
2 teaspoons grated ginger
1 tsp ginger
1tsp chilli powder
1tsp turmeric
4oz red lentils
4oz green lentils
three quarters of a pint of water
Heat oil, gently cook onion and garlic until soft, Mix ginger,turmeric, chilli powder in a small bowl with 1 tablespoon water to make a paste. Add this to the pan and cook for 2 minutes. Add the lentils and measured water and boil. Cover pan and cook on low heat for further 20-25 minutes or until red lentils have fallen to a puree and the green lentils are soft!
I had this for dinner today it was great!!!

THE ULITMATE VEGAN MEAT-FREE LOAF!

I got this off a christian-vegan e-mail group I'm a member of. It works really well and is truly delicious!



One of a kind loaf:wave:
INGREDIENTS, PICK ONE FROM EACH CATORGORY.
LEGUMES --- 2 cups
cooked legumes of any variety, such as lentils, kidney beans,
garbanzos, pinto beans, soybeans, or tofu, etc.

GRAINS --- 1 - 2 cups
whole grain bread crumbs, rolled or quick oats, cooked brown rice or
millet,Grape-Nuts cereal, crushed whole grain cereal flakes, whole
grain cracker crumbs, whole grain croutons, etc.

NUTS --- 1/2 cup, chopped or ground almonds, cashews, pecans,
pumpkin seeds, sunflower seeds, walnuts, etc.

LIQUID --- 1 1/2 cups
broth from cooked vegetables, plain soy, nut, or grain milk, tomato
juice or sauce, V8 beverage, etc.

BINDER --- 1
2 Tbsp. soy flour, 2 Tbsp. whole wheat flour, 2 - 3 Tbsp. gluten
flour, 3 Tbsp. potato flour, 3 Tbsp. minute tapioca, 1/2 cup cooked
oatmeal, 1/2 cup cooked "cream of wheat" cereal, 2 Tbsp. soaked mung
beans, blended, etc.

SEASONINGS --- 1/2 - 1 teaspoon of one or several, as desired
cumin, sweet basil, Italian seasoning, oregano, parsley flakes,
rosemary, sage, All-Purpose Seasoning, celery salt, garlic or onion
salt, garlic or onion powder, food yeast flakes, salt, Vegex, Liquid
Aminos, etc.

VEGETABLE SEASONINGS --- 1 or more
1 onion, chopped
1 - 2 cloves garlic, minced
2 - 3 tablespoons chopped pimiento, etc.

***ed. note: celery, frozen peas, chopped carrots, mung bean
sprouts, olives,etc.



Recipe



GENERAL DIRECTIONS

Mix all selected ingredients together. Press into a sprayed loaf
pan and bake at 350 degrees for 45 minutes. Serve with a light
gravy, if desired. Can also be sliced and used as a sandwich
filling. Freezes well.

Hummus is good eaten several ways:
1) Just use it as a dip with carrots, pita triangles.
2) Use it as a sandwich spread with some nice lettuces, tomatoes, kalamata olives (take out the pits), vegan cheese (or feta if you're a lacto/ovo vegetarian as I am)
3) Serve it as part of a nice middle east mezza (appetizer) platter: serve with baba gounoush (sp?) which is an eggplant dip, tabouli (a bulgar wheat and parsley salad), falafel (fried chickpea patties), pita bread and raw veggies and olives. Also with a nice warm crusty bread and olive oil with cracked pepper and a splash of balsamic vinegar to use as a bread dip.

Now I'm hungry!!!
