Hi all, I am a zombie, but I made a cake tonight...but the ravenous hordes got to it before I got a photo of it cooked, so here is half a cake:


Yes, that is an Australian flag tea towel. We are weird when it comes to patriotism.

The cake has peaches and coconut in and on it and is delicious and dead easy to make.

Heh, it's cheat's "pantry" (larder) cake.

1 box butter cake mix
410g tin peaches in juice
3tbs butter
2 eggs
2tbs shredded coconut

put oven on to 180*C
grease a ring (bundt) pan
drain the peaches but keep the juice, add half the drained peaches back to the juice.
mix everything except the non-juicy peaches and the coconut together with electric beaters - 1 minute on low or until combined, then 4 or so on medium-high to blend it all (yes you're supposed to smush the peaches when you do this)
tip it in the pan
put that in the oven for 20 min
get it out, put the reserved peaches and coconut on top (bonus points for a pretty design, i usually make mine a flower)
back in for 20 minutes
cool for 5, then tip onto a wire rack to cool (i cover mine in a tea towel first, then put another teatowel over to flip it)
EAT!

(this is awesome when hot, especially with icecream)
