Based on your definition of inspired Byfaithalone1, I think that very little is inspired. I view as inspired what God inspires us to write in our hearts. Often times it is from interaction with Him, not from what he relays to us (the gospels aren't relayed, most of the OT/NT aren't relayed, only things like Daniel/Revelation are relayed).
What is special is what God chooses as scripture. It is what those who follow God consider authoritative. Note that sometimes this changes, but I would always be very hesitant to change it... I would need to feel directed by God to do so.
Obviously if His followers are following something as scripture that He does not want them to follow as scripture, He will direct their path differently and they will quit considering it as scripture. As fewer and fewer of His followers consider something as scripture, than future geneations also know not to consider it as scripture. Unless they are directed to otherwise (so the process can add to scripture as well).
The fact that our scripture hasn't changed much in almost 2000 years tells me that what I need exists within it.
