Steak salad
Thinly slice leftover steak & mix with mayo, onion, mustard, dill & sweet relish. I have also put a touch of steak sauce in this instead of the mustard. I imagine you could also toss in some chopped fresh tomato.

Tomato Cucumber Pasta Salad
Mix cooked rotini pasta with chopped tomato, sliced onion, chopped cucumber & your favorite vinegar-based salad dressing.

Fruit salad
I like to mix fresh pineapple, blueberries, strawberries, blackberries, raspberries, red grapes, honeydew melon & watermelon. Leave plain or dress with lime juice & honey or for a creamy salad dress with yogurt & honey. Make the dressing on the side to taste & then toss with the fruit.
Honey & lime juice dressing:start with the honey & add lime juice to taste.
Yogurt & honey dressing:start with the yogurt & add honey to taste.
Use pieces of the fruit to taste the dressing.

This is one of my favorites...I don't use the tofu...I use cheese instead....Sometimes bleu, cheddar, or my personal favorite, Pepper Jack.....The only thing is you need to wait until the very last minute to put this together....I also have a yummy sweet salad recipe...I find that one for you later....

Cucumber and Tomato Salad

INGREDIENTS:

  • 1 tomato, chopped
  • 1 cucumber, seeded and chopped
  • 1/4 cup thinly sliced red onion
  • 1/4 cup canned kidney beans, drained
  • 1/4 cup diced firm tofu
  • 2 tablespoons chopped fresh basil
  • 1/4 cup balsamic vinaigrette salad dressing
  • salt and pepper to taste
DIRECTIONS:

  1. In a large bowl, combine the tomato, cucumber, red onion, kidney beans, tofu, and basil. Just before serving, toss with balsamic vinaigrette salad dressing, and season with salt and pepper.

Scroll through the recipe board and you'll find my recipe for Poppyseed Dressing. It's wonderful on any variety of veggies. I usually fix it with a bag of Spring Mix greens, walnuts, tomatoes and mandarin oranges. Makes a beautiful presentation and tastes great! It's also great over fresh broccoli. My 16 year old loves it!

I use to work in a Camp, so I had to make lots of salads. I particulaly like this one

Buy different veggies
cucumbers
green peppers or coloured ones
tomatoes
broccoli
cauliflower
red onions or sweet onions
carrots
mushrooms
any other veggie you would like to add
and 1 or 2 bottles of either Zesty Italian or plain Italian


Cut veggies up into big pieces, bite size not small. Pour bottle(s) over veggies and let marinate for a few hours in the fridge, stir it around and try not to pick...hard not to though...serve and enjoy...also you can do this with mushrooms. Buy whole mushrooms and wash them, put them in a jar and add zesty or plain Italian and let sit in the fridge for few days...these are really yummy and add them with your pickles or other condiments. enjoy!

best salad in the world, IMO:

take a head of romaine lettuce and take most of the outside leaves off, leaving you with the "heart". don't worry about leaving too many on.

rub with a good extra virgin olive oil, add salt and pepper (use kosher salt or fleur de sel and freshly ground pepper. i cannot stress how these two simple things will make everything taste better).

throw on the grill until lightly charred on the outside.
top with golden raisins, manchego cheese, pistacchio, and jullienned prosciutto (before you julienne the prosciutto, have it sliced super thin. it should be almost translucent. your butcher should be able to do this, or you might find pre-sliced in your grocery).

this is my friends recipe, and what really makes it stand out is the grilling of the romaine. i would recommend the above toppings, but you could substitute your favorites. i even eat it plain, but if you do this, anoint it with the EVOO again after cooking. bon apetit!

Here's a Mediterranean Chopped Salad recipe that I like.

Add equal amounts of everything here, and cut into bite-sized pieces when needed.

Ingredients:

roma tomatoes
canned artichokes
capers
good-quality olives
feta cheese
broccoli
celery
cucumber
spring greens

Mix with "Newman's Own" balsalmic vinaigrette right before serving.

Marinated Broccoli and Cauliflower

1 1/2 pounds cauliflower
1 1/2 pounds broccoli
1 cup cider vinegar
1 tablespoon granulated sugar
1 tablespoon dill weed
1 teaspoon salt
1 teaspoon pepper
1 tablespoon garlic salt
1/2 cup vegetable oil

Break cauliflower and broccoli into florets. Mix remaining ingredients and pour over vegetables. Refrigerate for at least 24 hours.

Drain well before serving.

Corn and Green Pea Salad

This is good for a picnic or a casual meal.

1/3 cup vegetable oil
1/2 cup granulated sugar
1/2 cup vinegar
1 teaspoon salt
1 teaspoon pepper
1 can small green peas
1 can shoe peg corn
1 small green bell pepper, finely chopped
1 small onion, chopped
1 cup celery, chopped

Boil vegetable oil, sugar, vinegar, salt and pepper. Let cool, then pour over vegetables and let stand overnight. This is very good!


Overnight Layered Green Salad

1 small head iceberg lettuce,
torn into bite-size pieces
1 small head romaine lettuce,
torn into bite-size pieces
1/2 pound bacon, cooked and crumbled
1 small purple onion, chopped
1 (10 ounce) package frozen English peas, thawed
1 medium-size sweet red pepper, chopped
1 (8 ounce) can sliced water chestnuts, drained
1 cup shredded sharp Cheddar cheese
3/4 cup mayonnaise
3/4 cup sour cream
Garnish: sweet red pepper rings

Layer first eight ingredients in the order listed in a large, clear salad bowl. Combine mayonnaise and sour cream, stirring well. Spread over the top of the salad, sealing to the edge of the bowl. Cover and refrigerate up to 24 hours.

Garnish, if desired.

Yields 12 servings.

If you would like to make a fruit salad a know a pretty good recipe for one.

Ok what you do is take 1/2 cup of cut strawberries,un cut bluebarries,cup up pinnapple,and watermelon.(for the stawbarries,pinnapple,and watermelon,all you have to do is buy a fruit tray at the grocery store ;) ,it saves alot of money)
Also buy some fruit yogurt & some honey is always good.

Just pour the fruits in and mix up and then put in the yogurt and the honey,or just yogurt,or leave it plain.Its good all three ways.Enjoy!:thumbsup:
