The color of the sun is white.
The sun emits all colors of the rainbow more or less evenly and in physics, we call this combination "white".

What does it mean when we say a thing is a particular colour?

Do we mean it has a certain pigment? How then can we say the sun is any colour? Is the sun pigmented? And does that pigment (if any) make any difference to how we perceive it?

Or when we say colour, do we mean the wavelength of light that is being reflected by it? But then, you could say I am wearing a white dress, but if I then stand so I am being lit only be a blue light, the dress will only reflect blue. Has the dress become blue? Does saying the dress is blue tell us anything about the dress, or just about the light shining on it?

Yes the sun used to be yellow, at least if you were where the majority of people in the US lived and still is in many places. It is called pollution. The sun hasn't changed but the light that reaches our eyes has. Driving into Los Angeles from the east in the 70's and you could see the difference as you approached the LA basin and when you got there, the sun was definitely yellow. But go hiking in the High Sierras and it was a whole different experience where everything had a blue tinge or more a lack of red compared to what you or I was used to.

BTW it is also time for your video person to replace their ancient fluorescent lights with something more efficient or at least learn how to set the white balance to adjust for human perception of color relative to the camera's. :)

Well then I guess that my question is what is your point since the sun hasn't changed but the Mandela effect is an observation of the fallibility of human memory?

Mandela died after prison… then died again later.

That was the retcon.
