Gnaw, gnaw! We had beer marinated pork chops today with spaetsle with gruyere and a beer, broth and spice based sauce (I tossed a few tablespoons of cream in it because everything tastes better with a bit (or more) of cream). Quite tasty! Trying to figure out what to cook tomorrow... hmmm... might be time for some chicken pot pie!

Last night my wife and I made scrambled egg soft tacos that were delicious! We used a few peppers, plenty of onion & garlic, and some deliciously fresh roma tomatos. We cooked that stuff, then cooked the egg into it, then wrapped it up in tasty corn tortillas with some fresh avacado and cilantro.

To. Die. For.

I seriously love cooking because I seriously love eating.

I have been eating Greek yogurt with honey everyday. It may not sound that exciting, but I crave it like crazy when I don't have it. The full fat type is the best (!) but I can't go that crazy. The 2% kind is rich enough.

And hot cocoa, vanilla pudding cups and coffee with half and half :)

For dinner I took some focaccia rolls and cut them in half. I roasted two cloves of garlic and mashed that together with about a half tablespoon of butter and spread the mixture on the rolls and toasted them in the toaster oven. On top of that went some homemade honey mustard mayo followed by 3 slices of bacon. Then I put some roasted red pepper strips on top of the bacon. I made medium rare buffalo burgers with cheddar and baby gouda cheese on top. This was followed by a slaw of shredded green cabbage, apple, and feta cheese with a balsamic vinaigrette. The burgers were served with a side of sweet potato french fries. I cook and I eat in times of stress. Tonight was a particularly delicious stressful night.

We ended up going out to the new local beer bar! Awesome place! So it was a grilled cheese with prosciutto on sourdough and a cheese platter for dinner.
Hubby is gone tonight so I have a feeling it will be spaetsle with some of that sauce from the pork chops and a lot of grated gruyere. Tomorrow I'm making chicken pot pie!

Chicken salad (leftover burrito stuff) for lunch yesterday, blackforest cake with cream, iced chocolate (ours are somewhat like a chocolate milkshake but a lot more grown up) and a Grand Angus burger from McDonalds for dinner. Yum.

I am excited for the upcoming season of Major League Soccer. I know a lot of folks aren't fond of that league, and that's ok with me, but I love it.

I'm also a big baseball fan. I got a little shiver down my spine when pitchers and catchers reported to training.

I get my first weekend off in over a month this coming weekend. I think I'll throw back a bit of scotch with a nice book in front of a fire.

I've got Jaroslav Pelikan's History of Doctrine that I'm about 200 pg. into. Highly recommended!
