In view of recent events emotions are running very high. We need to remind people of some basic principles in debating on this site. We need to be civil when we express differences in opinion. No personal attacks. Avoid you, your statements. Don't characterize an entire political party with comparisons to Fascism or Communism or other extreme movements that committed atrocities. CF is not the place for broad brush or blanket statements about groups and political parties. Put the broad brushes and blankets away when you come to CF, better yet, put them in the incinerator. Debate had no place for them. We need to remember that people that commit acts of violence represent themselves or a small extreme faction.

I totally missed that you were sick when I posted earlier. When I post from work, things like that happen. I hope you get well quickly.

Come in on a plane. fairs are cheap right now. :)

hehe, no green beans?

My pet got too expensive. I put almost all my blessings toward getting the Holy Grail and then I found out the pet was going to cost me an arm and a leg to keep fed, so I put it up for adoption. I think Fluffy is happy in her new home.

*Scratches head* I should check on her.

Well after a vaction time I am back. Let me tell you that I feel 100% better. I was getting quit burt out. Thank goodness this Home made apple pie I brought to add to the table tonight did not get the same way.:D :D Anyway it is good to be back.

OK, I made pot roast, potatoes and carrots for dinner, but my darling :sigh: children have informed me that they do not like it (although they ate it 2 weeks ago). So, I have brought it to share with all my hungry friends here. enjoy!

Did I see apple pie here???? think I have vanilla ice cream to go with it :yum:

actually for my vacation I did not go anyplace. I just stayed home and vegged out. It was well needed. However, with three kids it is neer impossible to veg so most of the time I spent with them. They loved it too. It had been a long time since i just spent time with my little ones. I even took a day and took my oldest to see Spiderman 2. The week was fun but it is good to be back.

(OOO my I forgot the a la mode for the pie any vanilla Ice cream out there to serve with this yummy pie)

*Larkep: just come on here and type in the recipe. The best thing about this forum is little knowlegde is needed to just post.

OK guys, you asked for it so here it is! California Chicken Enchiladas!!!

Ingredients:
3 cups chopped cooked chicken (You can use a store bought rotisserie chicken but I
prefer to buy a fresh one and stew it!)
2 cups (8 ounces) shredded Monterey Jack cheese with peppers (Pepper Jack)
1/2 cup sour cream
1 (4.5 oz) can chopped green chiles, drained
1/3 cup chopped fresh cilantro
8 (8 inch) flour tortillas
Vegetable cooking spray
1 (8 oz) container sour cream
1 (8oz) jar tomatillo salsa
Toppings: diced tomatoes, chpped avocado, chopped green onions, sliced ripe olives.

Stir together first 5 ingredients.
Spoon chicken mixture evenly down center of each tortilla, and roll up.
Arrange seam side down in a lightly greased 13X9-inch baking dish. Coat tortillas with
cooking spray.
Bake at 350 degrees for 30 minutes or until golden brown.
Stir together 8-ounce container sour cream and salsa. Spoon over hot enchiladas;
sprinkle with desired toppings.

OK, that's it! Very tasty (and very easy) and if you take it to a potluck, be prepared to furnish the recipe. This is not a hot (spicey) dish, though the pepper jack adds a little spice.
If you like it hotter, use some hot tomatilla salsa (also called salsa verde). I've never been brave enough. ENJOY!
