The recipe for the zuccini lasagne is versatile as well as easy. You can adjust/substitute however you like. This is the basic recipe:
2 medium zucchini, peeled and thinly sliced
1 pound of ground chuck, browned and drained
1 container of cottage cheese (est. 16 oz. fat free, regular, or ricotta if you prefer)
1 can of Hunts spaghetti sauce (28 oz)
32 slices of pepperoni, microwaved on a paper towel to drain the grease
Microwave the zucchini for a few minutes on 50% power until soft and transparent. Time varies with your individual microwave.
Layer half of the ingredients in a 9x9 glass dish.
(Zucchini on the bottom, cottage cheese, meat, pepperoni, sauce)
Layer again with the other half.
Cover lightly with waxed paper or plastic wrap.
Microwave on medium setting until heated through and the cheese is melted. Again, the time varies with your microwave.
Let set for 3 minutes before serving.
In all the family gatherings and catering events that I have made this for, I have never had any complaints, mentions of disliking, or leftovers. Those who don't care for zucchini were pleasantly surprised.
