so... i forgot that this forum was here so i posted this on the main fitness and health board... so, it's here twice. my bad...

i'm looking for some good low calorie, possibly low carb recipes or meal ideas for breakfast, lunch, dinner, or snacks. i'm having a hard time trying to lose a few! and i'm running out of ideas!

Perhaps my favorite thing to eat is, egg plant put on the grill soaked in canola oil or olive oil and with garlic salt put on it. Also salad with some diet caesar salad dressing, diet pop, and some of those weight watchers chocolate ice cream bars. When I diet I diet right you bet!

low carb muffins

preheat oven to 350 makes 12

2c finely ground almonds (I use raw)
1c vanilla whey protein powder (no sugar!)
2teas baking soda
1teas salt
2teas cinnamon
1c Splenda
1/2c oil (or melted butter)
2 eggs
2TBL water
1c shredded summer squash

1.mix together the wet ingr. then add all dry ingr.
2. spray cooking oil into muffin pan
3. if you use paper baking cups, they should be sprayed.
4. divide batter evenly in the muffin pan
5. bake 22-25 mins.

you could use canned pumpkin instead of the squash, however, the carbs would be a little higher.

the paper baking cups peel away from the muffins MUCH easier if you let them cool at least 30 mins. before peeling. ;)
