So, this model does NOT line up with reality. Due to "design limitations". Why would that be? Why didn't you use a square surface? Have you ever noticed "design limitatations" on a globe?

Well... reality. It is quite easy to ascertain that at any time of the 24 hour period of a calender day, the sun is visible in some parts of the earth (not even small parts... half of it). You can test that... modern telecommunication makes that very easy.
Just chose some points equally spread out on
your version of earth's map, from the very east to the very west, send some trusted companions there and have them give you hourly video reports. If your model is indeed "reality", there would have to be a span of time when
all of them report only darkness.
But that doesn't happen.
Sun rises on the eastern side and sets on the western side at every point on earth. Easily observable.
Yes... the sun does that. But I am not talking about the sun. What happens to, say, boats that leave the "western" edge of your map? Why... in the real reality... do they instantaneously appear on the "eastern" edge of your map? (The non-design limited version, if you were able to present one).
Yes, the classic "there's coincidentally a force which balances out another force, so we don't feel anything."
There is nothing coincidental, and there is no balancing. Rotating restaurants are not subject to any "balancing" force... it is just they their rotation (still a lot faster than the globe earth rotates) is too slow for you to "get dizzy"... or even notice.
