It's usually just described as an extremely hot and dense state, but the current model is (roughly) of a single highly energetic quantum field, out of which the separate fields that produce the four forces of nature emerge, by a kind of phase change, as it expands and cools. IOW there was no matter (particles) until around 10‾³³ to 10‾³² seconds, and no atoms for several minutes.
