It sure is a word Norah Sis'

http://www.thefreedictionary.com/clabber

Clabber is a food produced by allowing unpasteurized milk to turn sour at a specific humidity and temperature.
Over time, the milk thickens or curdles into a yogurt ...

:D

I used to shake the lumps back into the whey LOL
not-today though  ~I guess I have grown more-fastidious
BUT.. I will try- ALMOST-anything, at-least once

:)

Thanks for the reassurance, Dave. I had an aunt who made her own buttermilk, but I have no idea how she did it safely. It was better than store bought stuff.

You can use fruit or vinegar to START the curdling process
There are many recipes [regional preferences]

As I said, if the milk has been stored hygienically
It is just a matter of time/ technique /flavouring [or not :p]

My mom did that, too, but her much older sister would use a gallon glass jar and make it half full of buttermilk. She kept in it the refrigerator and drank it with pepper sprinkled on it.

I don't think my mother made her own buttermilk....but I remember her drinking it...with pepper on it....what an old forgotten memory....

Back in those days.... ice, didn't keep milk 'fresh' for long
Buttermilk was a way of consuming it for-longer

Nowadays, advanced filtration and refrigeration preserves it for about a week 'fresh'
UHT ~long-life seems too artificial for my taste :yeuk:
