I found this immediately upon searching under this very title. I have believed for some time now that vegetables (and fruits) are vastly overrated as being necessary for good nutrition as they are pretty nutrient poor generally. I hardly eat any and to eat five servings per day is unthinkable.

I wanted to start this thread because some have argued (in another thread currently running) for the necessity of expensive fruits and vegetables in one's diet thus opposing my contention that a good diet is actually quite inexpensive.

The article mentions the USDA's "food pyramid" (which has been changed rather recently.????) which to me is just a means of promoting various agricultural enterprises, without regard to solid nutritional evidence that would justify them.

I love vegetables

I love some vegetables. I once ate a brussel spout, one of the worst mistakes I ever made (rutabaga is pretty awful as well).

We're nothing but primates, so veggies and fruits must be like 100% of our diet if we want to be healthy and our kids to be healthy.

Aww, I like brussel sprouts and rutabega. It is good to season them well, that helps with vegetables.

There are several considerations to think about. One, God did not create animals to be eaten. Herbs, fruit and vegetables were the original diet. However, after the Noahic Flood, the world was drastically changed. For starters, all the vegetation was destroyed (not the seed, though, since vegetation regrew), so for Noah and his family the animals on the ark had to be their food. There were seven of the clean animals and two of the unclean. Noah offered a sacrifice of the seventh clean animal, which, no doubt they ate and God gave permission to eat all the animals. Some creation scientists believe that the pre-flood world had a canopy that blocked space radiation. If that is so, then without the canopy the body was exposed to more deadly radiation than before the flood.

Two, we tend to look at our physical health by purely physical means. Proverbs says that the spirit bears the infirmities of the flesh (Prv. 18:14), which suggests that our physical health is first found in our spirits. These elderly brothers could have strong spirits that have sustained their health.

Finally, in my understanding of how God works with us, we have the responsibility to use wisdom in both the spirit and the natural. If we know that certain food are healthier, than we should eat those foods. Does that mean organic high cost food? I eat both organic and processed food depending on my mood and budget. But my first reliance on my physical health is the Spirit within me.

They are not overrated, what is overrated are organic vegetables and fruits...^_^
I think that everything we eat should be in a balance. Not only vegetables, but also we shouldnt claim that meat is our vegetable.

P.S: I dont like brussel sprouts...

I think the quality some vegetables can vary greatly depending on the crop. For instance, there have been times when corn on the cob is excellent and other times when it is barely edible, and I think the same is true with brussels sprouts. I don't normally eat brussels sprouts, but the occasions that I have eaten them have been very different experiences. My mom is a bigger fan of them than I am, but even she had an occasion when she tried one at a Farmer's Market and had to spit it out. Though if eating a brussels sprout was one of the worst mistakes you've even made, then you have been blessed.

My homegrown tomatoes and sweet corn are not overrated.

I didn't like tomatoes until I ate some that were home grown. There's just no comparison between them and what you can buy in a store.

Absolutely. Wait until they ate as ripe as they can get. Red through and through and DO NOT refrigerate.

Don't primates spend most of their waking hours looking for food, then sleeping the rest of the time? Gorillas have huge stomachs as they need huge amounts of nutrient poor food to survive.

Why would human health be dependent on something us humans can't even digest? (cellulose)

Actually human health is greatly dependent on cellulose and other forms of dietary fiber.

I love them both, but they have to be cooked well. If you ate boiled brussels sprouts, I can see why you didn't like it. I think they are best cut in half and roasted with olive oil and some salt.

Same with rutabaga/swede. Roast it in the oven with some parsnips, potatoes and carrots, yum!

What food is nutrient rich if you believe veggies are nutrient poor? Where do you plan on getting your essential vitamins?

Essential vitamins are produced in the gut from a variety of foods that may or may not 'contain' those vitamins.

Have you ever microwaved an ear of corn ? The shuck and silk comes right off and it is pretty good and quick .. Also love my tomatoes red ripe through and through too . I've seen the time in winter when I'd walk over a stack of T-bones to get to a couple good ripe tomato sandwiches ..
