Your claim is that you are not in the minority to hold to the mythological interpretation. That is fine. But, I believe many of the church leaders held that Adam and Eve really existed and came into being as recounted in the pages of scripture. Also, I have showed you how it was mainstream for church leaders to say that scripture is the word of God for at least 500 years. What they meant by that may have been somewhat ambiguous, meaning they were not saying if it had to be accurate about science. However, it was not a subject of debate as the theory of evolution was not a thing at that point in time. But, they certainly had no problem claiming the Bible as the word of God. You are somehow trying to tell me that to claim this is to be guilty of idolatry. There are many who share your belief about creation week for the most part, but would have no problem saying that the Bible is God’s word. And if anything, that makes you in the minority on this one.
Athanasius, in the fourth-century recorded that "The sacred and divinely inspired Scriptures are sufficient for the exposition of the truth." He also spoke of "the plain authority of the Scriptures" and "the divine Scriptures".
And yet at the same time, they recorded accurately all that God wanted them to say and exactly how he wanted them to say it, in their own character, style and language. In that sense, it would not be wrong to say that "every word is from God". You make it sound as if to say that, would mean that one must hold to a dictation view of inspiration or mechanical inspiration. This is just simply false.
