Those ex-mormon men who held the priesthood and then leave the Mormon church also leave the oath and covenant of the Mormon priesthood.
They don't need to.

Apparently they both believe those who leave are not saved. A belief for which you, being a Catholic, criticized them.
To clarify LDS beliefs here: LDS in no way believe a person who stops going to church for whatever reason is going to burn for forever.

The scripture you quoted is not about leaving the church, it is about breaking a covenant and altogether turning away from it.

Leaving Mormonism is leaving/breaking false covenants invented or borrowed from non-biblical sources. Yes, I turn away from Mormonism!

Mormonism:

Not only did he restore both the gospel and the church of Jesus Christ, as directed by the Lord, he also introduced, through the revelations he received and through his teachings, most of the major doctrines, practices, and ordinances that characterize The Church of Jesus Christ of Latter-day Saints.

Few things are more crucial to the “restitution of all things” (Acts 3:21) than the doctrines Joseph Smith taught. He spoke definitively and clearly on each of them, though his knowledge grew progressively. At times it came in leaps and bounds, as when he and Sidney Rigdon saw the Lord and the degrees of glory (see D&C 76); at other times, it came “line upon line, precept upon precept, here a little and there a little” (2 Ne. 28:30).

You are making a guess as to what will happen and How Jesus will make a judgement. You don't know how Jesus will decide whether a person will or will not end up in a temporary Hell or whether they will of will not have eternal life, and that is the facts.

All of the commandments are about love. Those who don't know love don't know God because God is love. No God no love. Know God know love.

Yes God is love and everything He does is about love. I know why He does what He does because I see the big picture. Why did God command Saul to smite and destroy the Amalekites and all that they have? It is because God sees the big picture and knows what will happen to the children of man if the Amalekites are not destroyed. So out of the love for future generations God had them destroyed. It was the same thing with the flood. It is better that many die than wickedness abound and the children of man be taught wickedness and end up in Hell. ALL of the commandments are about love as stated in the Bible:

37 Jesus said unto him, Thou shalt love the Lord thy God with all thy heart, and with all thy soul, and with all thy mind.

You are making a guess as to what will happen and How Jesus will make a judgement. You don't know how Jesus will decide whether a person will or will not end up in a temporary Hell or whether they will of will not have eternal life, and that is the facts.

If Mormon scriptures and leaders don't teach facts, you might be right. However:

"Latter-day revelation speaks of hell in at least two senses. First, it is the temporary abode in the spirit world for those who were disobedient in mortality. In this sense, hell has an end. The spirits there will be taught the gospel, and sometime following their repentance they will be resurrected to a degree of glory of which they are worthy. Those who will not repent, but are nevertheless not sons of perdition, will remain in hell throughout the Millennium. After these thousand years of torment, they will be resurrected to a telestial glory (D&C 76:81–86; 88:100–101)."
