The Koran speaks of miracles, the Book of Mormon speaks of miracles, and people even see Jesus' profile on pieces of toast and call them miracles.

I have always been curious why this doesn't extend to all theories, from a theological perspective. Why not theistic chemistry, or theist relativity? Why would God's interaction with nature be limited to evolution?

You're right. All of those could definitely be in-conjunction with theism. The majority of Christians (this is a major pet peeve of mine) just care about superficially debating whatever hot topic is currently brewing. I argue that the ones shunning climate change ought to be debating the consequences it has for life. I mean pollution has been shown to mutate our genes and increase the rates of lethal birth defects, cancers, CVD, etc., yet most will only extended their debates regarding life ethics to euthanasia and abortion .
Some will also go on and on about how gay marriage violates the bible, but no one cares to have similar discussions of how nearly 70% of Americans are overweight or obese -- gluttony and failing to take care of your body is a clear violation of the bible's word. Whether or be these issues or evolution, very few look beyond the chewed up and spat out fragments of a hot topic right before their nose.
