How would you expect that remains of creatures that rapidly were disposed of in a time long gone would 'seem' a certain way to you now?
Because we can actually observe and examine the history of life on Earth in the fossil record and it looks exactly as any rational person would expect. The only reason to invent a fantastical alternate past is because reality doesn't jive with your interpretation of an ancient story.
