Can't God grade on a curve? Must He be so stringent, when it comes to sin?

Research the Classical Covenant Theology. I have uploaded a file of The Tale of the Two Adams. Its an excellent and must read. Hope this helps.

God is the source of all life.

Sin is rebellion against God, a refusal to acknowledge His authority over all things. All "sins" come back to this.

Rebellion against the source of life brings mortality as its natural and logical consequence.

even if all of us spent eternity in hell, we would never be punished enough
Enough for what? What's the purpose of it? Just God saying "Fry, sucker! This is what you get! Bwahahahah!"? It's apparently not supposed to be remedial, just vengeful; one might say spiteful.

He put the complete punishment on His Son Jesus Christ when He died on the cross for us.
Appaently not the complete punishment,we're told that there's enough left over to barbecue us for all eternity if we don't make the cut.

Because He said so. ^_^
I thought the wages of sin was death, and that the gift of God is eternal life But we're told that the wages of sin is actually eternity under torture, because we have eternal life by default. Seems to be a conflict there.

and although they know the ordinance of God, that those who practice such things are worthy of death, they not only do the same, but also give hearty approval to those who practice them. God considers sin worthy of death.
I allus kinda thought that death rendered one, you know, dead. Not simply alive but consigned to torture. This seems to be one of those "what that really means is..." areas.

I am still waiting for the offender of my girlfriend to be punished.
You may have to wait until Judgment Day for the offender against your girlfriend to be punished. It may also happen to some degree in this age, unknown to you. The responsibility of Christians is not to judge the wicked in this age. The government is charged with this. Sorry for your pain, but pain is to be expected from following the cross.

God will even allow him to do it over and over again without puting a stop to it? Where is God's mercy on us?

But if there is justice then why do so many get away with stuff....even when you pray for justice God doesn't answer.

What are you talking about? No one gets away with anything, unless they are given faith enough to turn from their evils, repent, and are saved.

What is that exactly?
16 So we do not lose heart. Though our outer self is wasting away, our inner self is being renewed day by day.
17 For this light momentary affliction is preparing for us an eternal weight of glory beyond all comparison,
18 as we look not to the things that are seen but to the things that are unseen. For the things that are seen are transient, but the things that are unseen are eternal. - 2 Corinthians 4:16-18

So this is what God is doing to the offender?

Can't God grade on a curve? Must He be so stringent, when it comes to sin?

I believe the wage of sin must be death, because if unrighteous would live forever, they would make it eternal suffering for all. And actually, the reason is not the single act, but the unrighteous mind. If mind is unrighteous, it will produce unrighteous actions as long as it exists. To end evil, unrighteousness must be ended.

By their fruits you will know them. Do you gather grapes from thorns, or figs from thistles? Even so, every good tree produces good fruit; but the corrupt tree produces evil fruit. A good tree can't produce evil fruit, neither can a corrupt tree produce good fruit. Every tree that doesn't grow good fruit is cut down, and thrown into the fire. Therefore, by their fruits you will know them. Not everyone who says to me, 'Lord, Lord,' will enter into the Kingdom of Heaven; but he who does the will of my Father who is in heaven. Many will tell me in that day, 'Lord, Lord, didn't we prophesy in your name, in your name cast out demons, and in your name do many mighty works?' Then I will tell them, 'I never knew you. Depart from me, you who work iniquity.

Matt. 7:16-23

For out of the heart come forth evil thoughts, murders, adulteries, sexual sins, thefts, false testimony, and blasphemies.
Matt. 15:19

These will go away into eternal punishment, but the righteous into eternal life.
Mat. 25:46

For the wages of sin is death, but the free gift of God is eternal life in Christ Jesus our Lord.
Romans 6:23
