As promised, made my famous baked tacos last night for dinner.
I split my time during this shutdown between my place and my parent's place. When I'm at my parents, I make dinner for them. My Mom and I both eat very healthy, and so, I introduced her to these bad boys and one of my favorite meals.

There are times when I remember my days working and I want to go back to it, but then I remember how much I'd say I didn't want to work. Those were good days. Having a job is good even if it's hard at times.Oh, you know I will. Maybe if I don't eat all of it....
We are kind of weird this way.

Oh, another traveler like myself.Tacos remind me of my first proper trip across America - I mean, I head on down to Coney Island every year to meet a few pals for some mass hotdog consumption, but I never REALLY experienced America until I made it right across (I'm British.)
I ate some of the best food in my life in Dallas. The tacos were quite the revelation.
All of this talk about food and travel is making me HATE this lockdown even more. Anyone who knows me, knows that travelling is the air I breathe.
I'm also the biggest caffeine junkie in the world - a life without Rockstar and Monster is a bleak and very grey prospect.
