From a theistic perspective, they did not give mankind much purpose other than to look at their fossils. Not to mention the species that did not fossilize that mankind has no knowledge of.
Natural gas, oil and other resources needed for the development of a modern society.

In mythology, they gave us the concept of dragons.

In today's ecosystem, they gave us birds.

But a side note - even though everything is interconnected, not everything must be primarily made "for us". Everything is made for God, though.

Not everything is created for us. God so loves the cosmos (John 3:16). The universe is filled with things that have nothing to do with us and that we don't know about. Not every divine purpose or pleasure is related to us.

Especially if you consider we are on a single planet on a solar system that is part of a galaxy of hundreds of billions of stars that is in turn a part of galaxy group or clusters that themselves are part of super groups and you multiply the stars by few hundred billion or thousands of billions every transition to bigger reference point to get to rough estimate of 10 trillion galaxies for the universe.

Then you read that those 10 trillion galaxies are estimated to make up around 5% of the universe, rest 27% dark matter and 68% dark energy which we don't really have any clue what they are. Not to mention if we start to factor in stuff like multiverse.

And here we wonder about why God made few dinosaurs if it isn't all about us or we get some great Biblical reference that those 10 trillion galaxies sure help to mark the seasons for us.

It's to warn us against gluttony, the bigger we get, the easier it is for meteors to hit us.

Though a brontosaurus (called behemoth) is mentioned in Job and could drink up a whole river .. so I wouldn't say man had zero knowledge of them.

The scale of the Universe gives me a deep wonder and awe. This feels like a very good reason finally to me.

It's just enough. To be a sublime 'heavens'.

Their era lasted 165 million years before they went extinct. Humans have only been around between 300,000 to 6 million years. This kind of goes to show that creation may not be anthropocentric after all. You may be trying to find a reason for it based on an anthropocentric assumption, but the purpose of their existence may be wholly independent of us. Something to think about?

That reference to kosmos is referring to human beings. The rest of that verse puts the word in context.

Yeah, human arrogance likes to think God is only concerned about us, but proper humility puts things in persoective. All of creation longs to be freed from its bondage to decay. You know the scripture; I don't need to post it. God loves God's creation because it is good and it's God's. The incarnation is not just for humanity, it's for all creation. The only real problem in creation is humanity. Just because God, through kenosis, became like us to save us from ourselves, we think it's all about us. ^_^ Yeah, human arrogance is not only improper, it's boring.

No this has nothing to do with arrogance it has everything to do with context. Is the universe going to be saved if it believes? Will it perish if it doesn’t believe? Is there anything in the entire chapter about the earth or the heavens or the universe?
