Prayers that you are doing well.
I’m doing ok, the priest I’m in contact with told me that they can start the process to officially receive me as a member of the Church when I’m 18 until then we’ll stay in touch and maybe I’ll see him when I’m in London.

Praise God! That is wonderful news! May God continue to keep you safe and strengthen you.
Problem is he’s busy 24/7 due to being a heiromonk who sleeps in the Church and lives in it, so we rarely have much time to speak, plus everything I do is done in secret. I’m doing some extra readings on Chalcedon as of late and everything seems to make much more sense now.

Ah. Yes, that is tough. I've met several monks by now in my own time in the Coptic Orthodox Church, and it can be quite difficult to get ahold of them, or keep the communication open once it has started. Lord have mercy. I pray that God remove any barriers on the monk's side, and continues to keep you safe until such time as you can make your own decision, and of course afterwards.
