If I remember correctly, most Sunday observing Christians in the second century CE would likely choose # 3. Sunday became the new "Sabbath" and by medieval times Sunday was often rendered as "Sabbath".

Not the case. So you are likely not remembering correctly.

The Lord's Day didn't replace the Sabbath, and that wasn't the position of the Church in the 2nd century or the 12th century.
