We've ordered Maple syrup from Vermont where the company that produced it made it the old fashion way over a wood fire pit. You can taste a hint of smokyness in the syrup that really adds a flavor. I cut a hole in the middle of my pancakes and pour in equal amounts of real butter and syrup. Syrup without butter is like cake without icing. Then on the side I have pan-seared/boiled spicy Cajun Boudin sausage or Chorizo to add a contrast to the sweet syrup taste. ummmmm.......
