he's taking the word man and exchanging it for Adam the name of the man created before the garden in Eden. It's a linguistic trick but it is a misuse of the words. Jesus said the Sabbath was made for "man" as in humans, not the person named Adam in Gen 2. Humans didn't know about or keep the Sabbath until Exodus.

"Sin is not imputed when there is no law..." "Sin is the transgression of the law." Cain murdered Abel, sin before Sinai. All these things happened before Sinai. Genesis 26:5 proves the point. Noah knew which animals were clean and unclean, this was before Sinai.

Adam did not keep the Sabbath or even know of it. As for Noah, that he knew of clean and unclean animals does not prove anything related to the Sabbath.
Instituted in Exodus for man, the first time anyone knew of it which is why God explains the rules of the Sabbath.
