The weight of a 5 miles high flood surely should have an effect on the Earth crust.
The Flood had to cover mountains at least 16,000 ft high with "calm" water for several months at least. That requires covering the entire earth in a layer of water at least 16,000 feet deep. We're talking about nearly 200 million square miles of earth's surface each square mile of which will need 3 cubic miles of water on top of it at a minimum. There isn't enough water on the planet to accomplish that.

No. The ice caps are fused/frozen to the land. It would take longer than one year to loosen them. Any degrading of the surface would be concealed by normal weathering.

They are sitting on the surface. Ice is less dense than water. A flood would strip Antarctica and Greenland of ice. It would just float to the surface.
Yet the ice didn't get there until after the flood and as a result of the flood.

Not sure what you are asking. The climate changed after the flood and all the left over water in the northern extremities froze creating glaciers and land bridges. (Ice Age)
Prior to the flood there were no ice ages, hence no ice.
There have been many ice ages, we are still in one. Also, all the "left over water" would have still made the earth essentially flooded forever, because if there was enough water to flood the world and it all remained on earth, much more of the earth would still be flooded. Also, nothing about a global flood would create an ice age like that. Would it mess with weather patterns? Sure, but the elements of the atmosphere have much more influence on temperature than liquid water could.
Volcanic subduction during the flood could have caused a sort of nuclear winter over some parts pf the earth. (Impact winter, volcanic winter).
