If your convex disc moon is just above the horizon then someone in London would see the same features on the moon as someone in Sydney. That doesn't happen. How do you explain that?

Not really. Your explanation does not work. Perspective does not work that way. To make it simple the curvature drop of the earth is about 8 inches per mile. So in a 90 mile road that would be about 60 feet so it would be impossible to see the end of the road. In fact you can only see less than 10 miles.
The road rises and fall along its entire length. At eye level you can only see about 3 miles to the horizon. With my drone at 300 feet, the view is out to 21 miles. The drone can see trucks approaching that it can't see at 6 feet.Even at 10 mile there should be a 67 foot drop in curvature, but there isn't.

Just because an organisation calls itself "Freedom From Religion Foundation," and has "In Science We Trust" as their motto, that doesn't suddenly turn every scientist in the world into somebody who wants freedom from religion.
