We know that truth ("sound doctrine") is found within the Bible...so, why would I replace it with evolution?

No, "doctrine" is one's interpretation of the Bible. If God cannot lie Genesis cannot be literally true. I would say that when Christians claim that their God lies that is not sound doctrine.
