I suppose an athiest would say sunsets impress people because it is not the usual way the sky looks. We are wired to observe things that are out of the ordinary in our living environment. How many times are we impressed at an overcast sky? If we saw one once a year, for 5 minutes, we'd be like WOW.
Enjoying sunsets is somewhat irrelevant to the creation/evolution debate. Both sides would have an explanation as to how we ended up with this disposition.
