I read somewhere a long time ago that Deja-Vu was the signal from what you are seeing with your eyes is momentarily slow getting to your brain so by the time it does it makes you feel like you've been there before.

That, would not explain the music or, song, speech, or news-article in a newspaper
that you hear / read for the first-time
but, you are sure you have heard /read it, before (already)
AND, how about those pheromones that remind you of somewhere in your past
and those mental-images of the long ago visited place when a smell seems to come out of nowhere
to remind you and fetch those images up to your mind's eye ?
