It's good to know some options, anyway. I must confess when I heard of ppl (inc. some of my friends) needing to eat gluten free, it seemed like it was very restrictive, but good to know there are doable options, anyway.To answer the initial question (perhaps too late), here's a gluten-free, dairy-free Banana Pudding recipe I used at Thanksgiving and Christmas last year:
8. Guilt-free Banana Pudding
Ingredients
8 egg yolks
1/2 cup honey
1/2 cup arrowroot powder
4 ripe bananas, mashed
1 tsp salt
4 cups full-fat coconut milk
2 tsp vanilla extract
2 ripe banana, sliced
Walnuts, optional
Instructions
Whisk together the egg yolks, honey, and arrowroot powder in a medium glass bowl. Set aside.
Heat the coconut milk in a small saucepan over medium heat, stirring occasionally, for 5 minutes. Slowly pour the coconut milk into the egg mix, whisking constantly. Transfer the entire mixture back into the saucepan and cook for another 2-3 minutes. Stir regularly until thickened, making sure it does not boil.
Transfer the mixture into a large bowl and whisk in the vanilla and the mashed bananas. Chill for one hour.
To serve, spoon the pudding into a glass. Top with sliced banana and walnuts if desired. Serve immediately.

I started this years ago so there's lots to go through and it does pertain to a Biblical diet and there's recipes and more info.
If serving to a mixed crowd here are a few tips.
Don't put your dish near any others that have crackers, bread or other crumbly things that might get into your dish, cross contamination is a biggie. It only takes a small crumb to make a Celiac sick, ask me , I know.
Try and make something that can be enjoyed by all but make a point to make a large enough sign so others can see it is a special diet food and won't over indulge.
Or just make lots!
A favorite I've made for groups and there's never any left when It's over , sadly, is my Spinach Garlic dip.
I serve it with GF veggie chips or you can do carrot stick, celery, green beans, they all go well with it.
It's potent, and everybody comments on that fact at first bite but then they can't stop eating it. It is not only GF but it's also good for a Celiac because of the garlic since it is low cal, but packed with nutrition, and it among other things, helps to boost the immune system, something Celiacs need all the help with that they can get.
Now for the recipe
Into a food processor place
1 bar cream cheese, or Neufchatel (Philadelphia Brand is GF) (cut into four pieces)
3 Hand fulls of fresh spinach
4-6 Garlic Cloves
2" piece of red pepper (sweet Bell pepper, not a lot and optional but adds to the taste and presentation)
2-3 Calamata Olives if you have them
Turn on processor and blend until all spinach appears chopped and incorporated
That's it! Put it in a pretty bowl and set out the veggies or chips with it (potato chips are not strong enough)
You can double or triple to make a large amount but do it in batches of the recipe above, it only take about 5 minutes from start to finish
