Wondering in 1 Cor 11:4, where it says "prophesying" is this referring to just giving a sermon.. and if so, then is it the Orthodox view that in general the head should be uncovered when one is giving a sermon?

no, i dont see it as the same. I have seen priest's heads both covered and uncovered during the sermon.

I am a possible convert to Eastern Orthodox Christianity, and have noticed that although Paul indicates in 1 Corinthians 11:4 that men should not pray or prophesy with their head covered, there seem to be some (although not all) Eastern Orthodox Christian priests who have their head covered when they pray or preach. What is their argument for doing that?

They take the hat off during the reading of the Scriptures and during the consecration, so prophesy and prayer is with an uncovered head. New Martyr Daniel Sysoev also made the point that monks are married to God, so they wear a covering on their head.

Has he been officially canonized by an Orthodox synod? I'm only asking to discern how much authority to give to his teachings, relative to that of others.

No, not a Saint I don't think. He was killed in southern Moscow by a muslim gunman like 10 years or so ago...

not yet, but he’s solid

No. His family and friends are "pushing" for it. I think he will likely be canonized due to his martyrdom. Here is an English-language interview of his widow, daughter, and spiritual son--the only I know in the English language:
