How about grilling? Like fish for example? Stews are also another option... just throw the things you want in it and just let it simmer for a couple of hours... you can do this before you leave for work in the morning and come home with a nice fall- off- the- bone kind of meat with a nice thick broth... i can suggest some recipes if you like.

Like fisherman2 says, it would be great if you mention what you specifically prefer.

OOOh OOOh, I have just the thing!! You will absolutely love this!!! A friend gave me the recipe and it is very simple!!!

Sweet And Spicy Chicken

1 Lb. boneless, skinless Chicken Breasts

3 Tbs. Taco Seasoning; I used chili powder

11 oz. Chunky Salsa

1/2 c. Peach Preserves

Put chicken in a resealable plastic bag, add taco seasoning, close and toss to coat.

Put 2 or 3 Tbs. oil in a skillet and place on medium to medium high heat. Place chicken in skillet and saute until browned.

Combine Salsa and preserves, stir into skillet, cover and simmer about 5 minutes.

Make sure the chicken is cooked before serving over hot rice or noodles.

Serves about 3-4 people. I used chicken tenders in mine and it was just as good!!!
