One theory I have read is that he was writing their sins on the ground. It's plausible considering clairvoyance and knowledge of a person's hidden sins has been attributed to saints in Church history. Whatever he wrote, combined with his words, it stopped the mob and caused them to drop their rocks and go home. So it had to be something dramatic.
